Our Story

A sandwich shop years in the making

Mike Lindsey has been waiting for the right corner to do this one.

Back in 2021, when Lindsey Food Group was just getting started, Mike and Kim bought Pop's Market on Grace, a sandwich-focused deli downtown. It eventually became a second home for their fried chicken concept, Buttermilk and Honey, and the sandwich idea went in the back pocket. It never left.

Now it has a home. Lindsey's Sandwich Shop takes over the Short Pump Commons space on Pouncey Tract Road with a short, serious menu: paninis pressed on country loaf, focaccia baked for the job, Italian meats sliced thin and stacked, and a few house salads that regulars end up ordering every week.

Mike and Kim have built one of Richmond's most talked-about restaurant families since opening Lillie Pearl in the middle of 2020, adding Buttermilk and Honey, Bolo's Eatery, ML Steak, The Foundation and Love's Public Kitchen along the way. In 2023, Axios Richmond reported the group was on track to become the largest independent restaurant owner in the city. This one is the neighborhood spot in that lineup, the place you grab lunch and get back to your day.

How We Build Them

Three things we will not rush

The bread comes first

Country loaf for the paninis, focaccia for the cold ones, sub rolls that can carry the weight. If the bread cannot hold the sandwich, the sandwich does not go on the menu.

Sliced thin, stacked deep

Spicy coppa, soppressata, pastrami, Virginia ham. Cut thin so it folds soft, then layered until the sandwich earns its price.

Built when you order it

Nothing sits under a heat lamp. Paninis hit the press, cold subs get dressed to order, and it comes to you wrapped and warm.
